Best for cooking and eating. Introduced in the mid 1800s, it keeps well if refrigerated. It was named after James Fenmore Cooper’s novel, “The Spy”, which was very popular during this time. Spys tend to be large, reddish, smooth-skinned apples with bright white, crisp, juicy flesh.

The dormant 8-10" sticks are ready for spring grafting. If kept cool and moist and stored in the refrigerator or a dark place, they should be good into May. The scions are available in packages of 4 each. We also offer grafting wax in the Orchard Products.
